Upscale was born from a simple belief — that the food we serve our guests should look as remarkable as it tastes. Every board, every jar, every slice carries that idea forward.
Begin with the source.
We work with a tight circle of fishmongers and butchers — people who know our standards and know the difference matters. Salmon arrives whole. Beef arrives whole. We cure, slice and finish every gram in-house.
Compose like an artist.
Every board is arranged by hand. Colour, texture, contrast. A board should look as alive on the table as the ingredients did at the market — never flattened, never rushed.
