Upscale began in a small kitchen with a single goal — to make cured fish and charcuterie that looked as remarkable as it tasted. Each board is composed by hand, the way a florist arranges peonies.
We work with a tight circle of suppliers, source the freshest fish each morning, and cure everything in-house. Nothing is mass-produced; nothing leaves the studio that we wouldn't serve at our own table.
